Item #19 The design standard for an atmospheric vacuum breaker states that it may not be installed open to atmospheric pressure. It may not be placed in a situation where there is constant pressure on it for greater than 12 hours. The water was cut off at the valves after the device keeping it under constant pressure. This can become greater than 12 hours if not turned off at the faucet and pressure removed from the down stream hoses. Item #39 Items must be allowed to drain and to air-dry before being stacked or stored. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow. Cloth drying of equipment and utensils is prohibited to prevent the possible transfer of microorganisms to equipment or utensils.

Score grading: 90+ excellent, 80–89 needs improvement, under 80 failing. Inspection types include routine, re-inspection (a re-visit after a low score), and pre-opening inspections. Inspectors check temperature controls, hand-washing, surface sanitation, employee health, food protection from contamination, and proper handling of leftovers. A low score will typically trigger a re-inspection within 10–30 days.
