Item #9 The outside skin of an avocado can not be cleaned and sanitized to the requirement for a food contact surface. Once cut open, segregate the open halves in a location where the outer skin does not touch the exposed part of the avocado. Item #31 Check to see if the handwashing sink has a temperature mixing device. This must be set to provide 100 degrees F minimum. Item #39 Items must be allowed to drain and to air-dry before being stacked or stored. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow. Cloth drying of equipment and utensils is prohibited to prevent the possible transfer of microorganisms to equipment or utensils.

Item #2 Using ice to cool a product must be maintained with fresh ice to keep temperatures down below 41 degrees F. The ice and water must touch all sides of the container to do a good job of maintaining temperature. Items #34 and 42 These two items are closely related. Small flies were seen in the establishment. These are hard to get rid of if wet spots with heavy food sources are not clean and dry every night. The fluids from margaritas, and other drinks provide a lot of liquid and food for these flies. The breeding cycle for the flies is 72 hours from egg to breeding adult. With proper conditions, they can proliferate quickly. Clean nightly, and keep floors dry until pest control management removes the pest.

Item #38 The pork product was floating in the package above the water level. The tofu was hardly getting any water flow. The approved thawing methods are to maintain all the thawing product under 41 degrees F through the thawing process. The approved methods are: 1) thawing completely submerged under cool (70 degrees or less) running water with enough force to remove any dislodge particulates and for a time that keeps all of the food from going above 41 degrees F for more than 4 hours including the time used to prepare and cook, or the time to bring it back to 41 degrees F; 2) thawing in a microwave oven provided it is transferred immediately to conventional cooking equipment and fully cooked; 3) Brought from frozen to completely cooked in one step, and 4) the best method, thawed under refrigeration of 41 degrees F or less. The violations were not enough flow in the tofu container and having a portion of thawing food above the water.

Score grading: 90+ excellent, 80–89 needs improvement, under 80 failing. Inspection types include routine, re-inspection (a re-visit after a low score), and pre-opening inspections. Inspectors check temperature controls, hand-washing, surface sanitation, employee health, food protection from contamination, and proper handling of leftovers. A low score will typically trigger a re-inspection within 10–30 days.
