Observed raw chicken in walk-in cooler above 41F (temped at 45F) and in the cold hold, salmon was at 45F, beef skirt was at 50F, and pork belly was at 53F. Cold hold unit is opposite to heat source and unit is opened often. Ensure cold hold and walk-in cooler are serviced.
